World pasta day is coming up fast on the 25th October and we wanted to share a delicious recipe for you to enjoy! This pasta is prefect for Spring weather, delicious salmon holding court with crème fraiche and capers bringing in all the extra flavours. A little parmesan brings it all together. 

But what’s the wine pairing you ask?! We recommend the new vintage ofRiversands Let’s Dance, a dry sparkling white wine. Try this slight change on your favourite sparkling, this vintage is a 50% Vermentino and 50% Chardonnay blend. The result? Citrus aromas, lemony, zesty with flinty hints popping through.

Salmon, capers and crème fraiche pasta recipe

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 small onion, chopped
  • 150g smoked salmon, chopped
  • 1 cup heavy cream
  • 3 tablespoons capers, drained
  • Salt and freshly ground black pepper to taste
  • Freshly ground black pepper
  • Pasta of your choice (we used penne)
  • Olive oil
  • Freshly grated Parmesan cheese


Directions 

Heat the olive oil over medium-high heat, in a large skillet. 

Add the chopped onion until translucent. Add your smoked salmon and keep it cooking for one to two minutes. Pour in the cream and add the capers to your skillet. Season to your liking with salt and pepper. 

Remember, don’t add too much salt as the smoked salmon and capers are both salty already. 

Add the pasta and toss it through. 

You can add a couple of tablespoons of the pasta cooking water to the sauce if there is not enough for your pasta, to thin the sauce down. 

Serve with a sprinkling of freshly grated Parmesan cheese and enjoy with a glass of Riversands Let’s Dance sparkling wine!
